I Love Lucy Cookbook



Picture this: You're all set to make a delicious meal for your husband Ricky, but alas, things go awry. You're getting dressed and what's that burning smell. Oh no! You forgot to check the oven. You run to the kitchen, then run back to the bedroom, because you're only halfway dressed, then run back to the kitchen trying to dress as you run, the smoke alarm goes off, Ethel runs in asking what's going on, you -- still trying to get dressed -- run into the kitchen, open the stove to find out your dinner is complete charcoal. WAAAAAAAAAAAAAAAAAAA.

Just in case they miss the classic peanut butter cookie here's the recipe:

1 cup butter, softened
1 cup crunchy peanut butter
1 cup sugar
1 cup light brown sugar, packed
2 eggs
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt

Preheat oven to 375 degrees. Beat butter, peanut butter and sugars. Beat in eggs. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Mix into batter. Refrigerate for one hour. Roll into one-inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake for about 10 minutes or until cookies begin to brown.

Try this tasty raisin tapenade:

3 cups raisins, chopped
2 teaspoons sherry vinegar
1 tablespoon sugar
dash of salt

Add vinegar, sugar and salt to the raising to make a paste. That's it!

To get you started on olive recipes try these Moroccan Olives. They make a great pre-dinner snack.

1 pound Kalamata olives
1/4 cup olive oil
2 tablespoons parsley, chopped
2 tablespoons cilantro, chopped
1 tablespoon lemon juice
1/2 teaspoon crushed red pepper
2 cloves garlic, chopped

Place olives into a one quart jar. Add in remaining ingredients. Cover tightly and refrigerate for one to two weeks.
