How to Make the Perfect Salad

1. Use 1 1/2 cups of lettuce per person.
2. Clean and dry your lettuce. The best way to do this is a salad spinner. Fill it with cold water, add the lettuce, and spin. Empty the water and repeat until the water is grit free and lettuce is dry.
3. Dress the salad right before serving adding a little at a time. If you dress it too soon the lettuce will wilt.
4. Add the delicate ingredients last.

green goddess dressing

1 minced shallot
1 minced clove garlic
1 tablespoon white wine vinegar
1 tablespoon lemon juice
2 teaspoons lime juice
1/2 cup olive oil
1/2 mashed avocado
3 tablespoons parsley
1 tablespoon chopped tarragon
1 tablespoon chopped basil
1 tablespoon chopped cilantro
1 tablespoon chopped chives
salt and pepper

Combine shallot, garlic, vinegar, lemon and lime. Slowly whisk in olive oil. Add avocado, herbs and seasonings.

better be balsamic

The right balsamic vinegar can make all of the difference. The older the balsamic the better.

Try this simple balsamic vinaigrette for a great tasting salad.

1/4 cup balsamic vinegar
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil

Beat the vinegar in a bowl with garlic, salt and pepper. Slowly beat in the oil whisking constantly. Put in a cute bottle.

salads with style

One of the keys to fabu salads is texture. Toppings add a whole new element and can change the experience. For a bold crunch you can add almonds or cashews. For a subtle chew cranberries and raisins will do. For creamy, soft try crumbled goat cheese. Play around with it and have fun.

Salad tip: Remember to put the dressing on at the picnic or it's soggy salad for you.
